Forget Everything I've Ever Said About Food


I kind of give up.

Alright, I only give up a little bit. But still. I'm throwing in the towel, hanging up my apron, and setting aside my fancy shmancy ideas about food.

It's summer and I don't want to cook. Or measure. Or stand over a hot stove. I don't seem to want to be within five feet of the kitchen. Yet I still have the inconvenient desire to eat something (and--incidentally--so does my family). Not just *any* something, mind you. I have discriminating tastes. I want to eat fresh, flavorful food that tastes complicated and luscious and takes me less than 10 minutes of prep time.

Am I asking too much?

This past week I've had to entirely toss the raw vegan dream for the summer as I can't seem to juggle raw vegan food prep with writing/knitting pattern designs, writing a book, and working on freelance articles (all while still being a reasonably sane wife and mother). Something's gotta give, and apparently it's food.

Needless to say... I'm kind of hungry.

I start hallucinating when I'm stuck at the computer for a four hour stretch, and find myself dreaming of having a personal chef to do all the work for me. I have obviously grown too fond of The Food Network (and this coming from a woman who has been without television for over 5 years!).

I mean, really. Throw a little brussel sprout hash in front of me (sans bacon and chicken broth, of course) and I'm yours forever.

So I'm on a new mission. I want decadent, scrumptious, gourmet vegetarian flavors that can come together FAST, and that are family friendly and filling (I am the mother of teenage boys, remember). And they have to be generally gluten-free (you can see my problem, can't you?).

What to do. What to do.

Do you have a favorite FAST and delicious vegetarian recipe to share? Gluten-free is great, but as long as bread isn't the main event I can probably adapt it.

Help me, Rhonda. Help, help me Rhonda!

Have you tried Gazpacho? Here's the recipe I use from the Moosewood cookbook.

4 C cold tomato juice
1 onion
2 C tomatoes
1 C green pepper
1t honey
1 clove garlic
1 cucumber
2 scallions
juice of 1/2 lemon & 1 lime
2 T wine vinegar
1t tarragon
1 t basil
dash of cumin
1/4 c fresh parsley
dash of tobasco
2T olive oil
salt & pepper

Now, you can be really tedious if you want and mince all that stuff, or you can use one of those magic choppers from TV, or you can throw the whole kit and kaboodle into the blender and puree it. I like the texture of it best if I mince, but I don't always bother.

And I definitely don't measure stuff. I throw in what I have, kind of glancing at the recipe. It is delicious -- always. Of course, I generally scarf down an entire loaf of bread with it *looks ashamed*.

It's best if you make this and let it sit in the fridge for a while before you eat it. Definitely a couple hours at the least.

Now I'm wishing for some 90 degree weather instead of this horrendous 60 degree rainy season we've been having in the northeast. Me, I'm longing for a nice warm lentil stew from the slowcooker. In July. Sad.

Umm... umm... umm... Salad? Yeah, that's all I got. Sorry!!! All my other standbys have the evil gluten in them. Apparently, I am made of FAIL. :)

I throw in a pressure cooker:
lentils
brown rice
green and red pepper
mushroom
onion
curry seasoning (more than just curry... ginger and cumin and stuff in it too)
salt
pepper
water
whatever else I feel like that day

It pressure cooks for 20 min. then I take it off the stove and let it depressurize (although most the time I let most of the steam out because I'm impatient)

My kids call it "gravel"..... sounds appetizing no? They eat it so I don't care what they call it. It's very easy too. Sometimes I even use dried onion, bell peppers, and mushrooms so I don't even have to cut those up.
